Sustainable Food Sourcing and Service

When we talk about sustainable food sourcing and service, we are promoting the following general guidelines

What do we mean by sustainable food?

  • Locally Grown.
  • Fresh and Healthy Foods.
  • Higher Quality and More Diverse Food Options.
  • Reusable, Compostable or Recyclable Dinnerware and Packaging.

Our seasonal menus allow for the use of as much fresh food as possible. Lack of processing reduces the environmental impact.

Lower food miles traveled typically means a smaller carbon footprint. Supporting local farmers helps maintain regional agricultural production that connects urban areas to nearby farming communities.

Recognizing that reusable dinnerware is not always available and appropriate, other options include compostable dinnerware (if composting facilities are available) and recyclable dinnerware.

Samples of a Sustainable Menu for a Waited Meal

  • Organic Tomato Basil Bisque or Cheddar Broccoli Soup
  • Locally Grown Greens, Tomato, and Roasted Vegetables with a Maple Honey Dijon Dressing
  • Free Range Rosemary and Garlic Grilled Chicken Breast
  • Laurel Vista Farms Twice Stuffed Red Bliss Potatoes
  • Local Vegetable Medley
  • Flourless Chocolate Cake with Simple Syrup Soaked Local Berries
